After the success in the preparation of string based sweets- Mysore Pak and Coconut Burfi, I ventured out today to try this Boost burfi. I am doing the theme - Nutritional food for growing sports enthusiasts, food supplements cleverly masked as a part of the Blogging Marathon #34nd edition ,as a part of Srivalli's Kid's delight event hosted by Pradnya this month.
Pradnya had given a few ideas about using health drinks to make desserts for kids in her announcement post .So I thought I will try out something with Boost,an energy drink that Lil Angel loves. I searched a few recipes and it seemed like the regular Maida cake but with the addition of a chocolate flavored malted health drink.
So I followed my mom's recipe and added boost to it at the end . Lil Dude was asleep when I made this , so I peacefully prepared it and successfully clicked it before he woke up. As soon as Lil Angel came back from school, she noticed the box of sweet on the table and wanted to taste it. Meanwhile Lil Dude started jumping up and down knowing that there was something in that box that would interest him!
I gave them one each and then I lost track of how much they ate!! Now I have hidden that box with just a couple of pieces in it for MIL and hubby to taste. So this does speak volumes about how good it is!! And it is fairly easy to prepare!
Maida / All purpose flour - 1/2 cups
Boost- 1/4 cup
Ghee- a little less than 1/4 cup
Sugar - 3/4 th cup
Water - 1/4 cup
Hot water - 2 teaspoons
1. Grease a 7" pan with ghee and keep aside. Mix boost with 2 teaspoons of hot water and keep aside.
2.Heat a pan and roast the maida on low flame for 5 minutes . Take care while roasting. The color should not change here. Add ghee and mix well. cook this paste for 2 minutes and remove from heat.
3. Transfer this into a small bowl and keep aside. Again heat a pan and add sugar and water .Check for the single thread consistency or use a candy thermometer The temperature goes up rapidly till 80 degree C then it is kind of slow, yet keep a close eye on the syrup. If you are unsure, keep the flame in low. I got the single thread consistency around 105 degree C.
If not using a Candy thermometer,check by taking a bit of the syrup between your thumb and index finger. Rub the fingers gently over the drop of syrup and take the fingers apart. If you see a thread between the fingers the stage is correct.
Lower the flame and add the maida paste immediately.
4. Mix well. At first it will be watery and then it will thicken. Cook on low flame till the edges leave the pan. Switch off the flame and add the boost paste.
5. Mix well and check the consistency. If it is watery cook on low flame till the mixture come together and the edges leave the pan.
Once this stage is reached, pour into the prepared tin and wait for a few minutes for it thicken a bit. Mark squares with a greased knife and let it cool.
Once completely cool, gently ease out the boost squares and store in an air tight container...
or serve immediately.....

- If you are unsure of the stages of cooking and adding the next ingredient, switch off the flame, add the ingredient and start cooking on low flame.
- If the mixture does not set in the tray after 10-15 minutes, remove the pan from the tray and put it into the pan and cook on low heat for a few minutes till it comes together. Don't cook for too long as it will become dry and powdery. Again pour into the greased pan and mark squares.
- It is easier to make this in a non stick pan.
- The quantity of sugar was just right. You can adjust it to suit your taste.
- You can use any other chocolate flavored malted health drink like bournvita etc. You can also add cocoa powder instead of the health drink. In that case add 3 teaspoons of cocoa powder and increase the sugar to 1 1/2 cups or more
